New Year, Old Recipe

Dorito Casserole - a family and friend favorite old recipe that I love to make and know the directions by heart!

Here is what you need:
1 big bag of Doritos
1/2 Green Pepper
1/2 Yellow or Sweet Onion
1 can of cream of mushroom
1 can of cream of chicken
1 can of enchalida sauce
1 can of tomato sauce
1, 2 cup bag of cheddar cheese
1 pound of ground turkey, beef, deer, or veggie crumbles

First preheat your oven to 350 degrees... Then, start by chopping the onion and green pepper and cook them in a pan until tender.

Next, spray the pan with canola cooking spray and line the bottom of a 9x13 glass casserole dish with crushed Doritos. No, it does not matter if every single part of glass is covered.
Next, dump the sauces and soups into a bowl.

Mix it all up really well!
Brown the meat or meat alternative in with the cooked onion and pepper.
Next add the cooked meat, onion, and pepper to the soup and sauce mix and pour this mix over the Doritos in the casserole dish. Then put a layer of cheddar cheese followed by the Doritos.
Your layers should go: Doritos, meat/soup mix, cheese, Doritos, meat/soup mix, and then Doritos. Once this is done bake it at 350 for 30 minutes. Once 30 minutes is up, add the last layer of cheese on top of the Doritos and bake for 5 more minutes and then serve!!

Pineapple Casserole

20-oz. can crushed pineapple, drained
2/3 c. sugar
3 T. all-purpose flour
1/4 c. margarine, melted
1 c. shredded Cheddar cheese
2 c. Ritz crackers, finely crushed

Combine all ingredients except cracker crumbs; place in a lightly greased 8"X8" baking pan. Top with cracker crumbs. Bake at 350 degrees for 20 to 30 minutes, until hceese is melted. Serve warm. Makes 4 servings.

Advanced Food Science

This morning I went to my Advanced Food Science lab and we were given ingredients and told to cook things with it. I took some Italian Dressing and some Kraft Hickory Barbeque Sauce and Seasoned Meat Tenderizer, mixed some in a bowl and poured it over 4 huge boneless skinless chicken breasts and baked for one hour at 375. Can you say delicious??? It was!

I am heading home for the weekend today and the Falcons game comes on tonight and I am looking forward to visiting some of my finances family's house to grill and eat chips and dip and play with their little babies! I love kids! AHH!

I have a pineapple casserole recipe that I love but I am looking for a new one... I will update when I find a new one that I am going to try :)
