NASCAR and Family

            Growing up with a father who loved NASCAR was exciting. I never had to guess what would be on our television set on any Saturday or Sunday during the race season. Although each family member likes a different driver, we all had one in common, Dale Earnhardt. I still recall seeing that number three car racing around the track on our television set that was definitely not a flat screen. My dad would be “a hoopin’ and a hollerin’” as I called it. He would get excited as Earnhardt took the lead, and get angry if Gordon was even close to him.  I never realized the depth of my love for the sport of NASCAR until I had to argue with my Dad that Dale Earnhardt had really passed away after that sad day in Daytona.
            I always found it amusing that NASCAR began by the men racing cars with huge trunks to see who would get to haul the moonshine that night. These men probably never knew that racing would become such a competitive and popular sport. Now that I am older, I have went to several races, and in person, it is a lot different that the television makes it seem. The cars go extremely fast, the turns are very steep, and the drunken rednecks are way more loud and crazy than they seem. I truly find NASCAR to be amusing, entertaining, and fun.
            Seeing that my dad was driving a truck most of the time when I was young, he was not home the day of Earnhardt’s wreck. I remember sitting in the chair that Dad sat in to watch the race. As the final lap of the race was taking place, Earnhardt was in third place, protecting the lead of Michael Waltrip and his son, Dale Earnhardt Jr. As the black number three car slammed into the concrete wall, I sat there staring at the television screen. The race had ended and Michael Waltrip won, and immediately, Dale Jr ran to his father’s car as the ambulances arrived at the scene. Later on that night, my dad arrived and began to ask about the race. I could not come to the point of telling him that one of the best NASCAR drivers in history was no longer going to be racing. My mama on the other hand, had no problem blurting out that he was dead. My dad was in utter shock. He did not believe us; he was angry and said that he was not dead. Mama walked into her room and pulled up the website with the video of the crash, and the news article stating that Dale Earnhardt had passed away.
            I know that Earnhardt would have won that race in Daytona. Even to this day he is appreciated and missed by many. He was a genuine man, he did not live a high class lifestyle nor did he change his ways because of his fame. He was a driven man, who was determined to win. He was and still is to this day known as the intimidator. No one will ever drive a car in NASCAR with his number on it. His son, Dale Earnhardt Jr continues to race to this day and has been very successful in carrying out his father’s legacy. Dale Earnhardt is a legend, and I would love to be able to meet him, even though he has passed on, he will never be forgotten.

Sloppy Joes

Mary Kate and Ashley Olsen were my favorite actresses growing up and I owned every single one of their movies! One of my favorites was when the girls went to camp and met each other there and realized they were twins! While at camp, they were served manwiches!
Well, I never knew what a manwich was but my mama always made us sloppy joes growing up! Now, I am not a huge fan of ground beef, I don't like hamburger helper or most hamburger casseroles, but I do love sloppy joes!
Sloppy joes are easy and cheap and it makes a lot of meals in one dish! Tonight, I used deer hamburger meat, 3/4 cup of ketchup, 2 tablespoons of mustard, 2 tablespoons of vinegar, and 2 tablespoons of wostershire sauce. Mix that all together after browning one pound of meat. You can also add in chopped onions and green pepper! Also chopped tomatoes!
Cook this and put it on a hamburger bun and serve! A childhood favorite is one of our family favorites now! :)

April Already???!!!???

In the midst of school, I am now 50 days away from being a married woman! How exciting is it to know that God placed two hearts together to become one family in 50 days! As we are reading through some relationship books recommended by our pastor who is marrying us, we are gaining more and more respect for each other and things are coming together slowly.

Our house is coming together, Benton continues to work on it while I am in school and when I am home, I like to go over and straighten up and help decorate! I even tried to do some yard work one day.

Also going on right now, is I am working on second-round dietetic internship applications, and man is it a lot of work during the hardest week of school ever! I know God has a plan for me, but I just had such a good feeling about the University of Northern Colorado and then I didn't get matched. So now, I am applying for three or four more and will find out in the next few weeks!

If I don't get matched, I will be looking for jobs and beginning graduate school in the fall! Also, I will be reapplying for the fall round of internships which begins in January of next year.

I trust God with this though, and even though I do not understand it right now, he knows best and knows exactly what will happen after graduation.

Currently, my great aunt June is passing away pretty quickly. In 1912, my great-grandmother Lizzie, a twin, was born. Years later she married my great-grandad who I never met, Sam Barton. They wed and had 12 kids! 6 boys and 6 girls, 6 blonde's and 6 brunettes, 6 blue eyes and 6 brown eyes. How amazing is that?!?!?

In 2006 Granny Barton passed away at the age of 94. She outlived some of her children and some outlived her. Currently, 5 of the 6 boys have passed: David, Charles, Bobby, Donald, and Jerry. Danny is a pastor and he is still a healthy man with 4 grown children and a 2 grandkids and one on the way! As for the girls, all 6 are still alive: Vivian, Faye, Evelyn, Sue, Beth, and June. And currently, Aunt June is very sick with cancer in both lungs and pneumonia. This is such a strong family that is close and has grown even closer over the years. How sad it is to see one suffering, but I know that watching her suffer is worse than anything I've ever seen. I know that soon God will make her suffering stop, and in the midst of all this business, her brother and sisters will be together for a few days from miles and miles around, they will be together again.

How great is it that God gives us family? Family is a backbone of who we are as we grow and I love knowing that when family fails or passes that we still have our father, Jesus Christ to turn to in the midst of pain and darkness.

1 1/2 Weeks

In less than 2 weeks (1 1/2 exactly) Thanksgiving Break will be here! Food and Family is right around the corner. My Fiancé’s family has delicious Thanksgiving lunch filled with fried turkey, dressing, and other "fixins" and I always have to eat it for supper and pray that my fiancé has saved me some skin from the dark meat of the turkey!

Whereas my mother's side of the family for Thanksgiving lunch will be going out to eat since our family has shrunk due to family members getting married, moving away, passing away, and so on...

As for my father's side of the family we will be going to the nursing home to eat with my Grandmother this upcoming Saturday for Thanksgiving and I must tell you - I enjoy going to the Nursing home and visiting - I enjoy the whole geriatric setting!

And then, my Daddy's sister, Sherry will cook and we will do Thanksgiving with them and let me just say, my Aunt Sherry is an AMAZING cook! Such a sweet woman too!

With Thanksgiving and these meals right around the corner, I definitely need to pick up my exercise routine to more than running a mile and a half and lifting five pound hand weights. Also, as much as I love fried turkey, I am so glad that I do not eat it every week - I would be huge!

Christmas will be here before I know it and usually by now I am done Christmas shopping and as of right now, I am not even halfway done!!

I have no idea what to get my parents, my papa, my brother, my fiancé’s mother, my fiancé, or my cousin and his new wife. I keep telling myself that I am ready for finals to be here and for this semester to be over since it is so tough, but with Christmas so close to the week of finals - I simply am wishing there were more payday Friday's between now and then! I am substitute teaching on Friday's to make some extra money and I absolutely love it! I sometimes wish that I could just be a nutrition teacher for elementary schools! Can't a new science "Nutrition Science" be incorporated into our schools curriculum??

So this morning I woke up fully refreshed - this new time change has had me in such a great mood in the mornings. This morning I listened to the new Jason Aldean CD ("My Kind of Party") while getting ready and it was worth every penny spent!

I grabbed a Boost on the way out the door this morning because I did not have time to make breakfast before heading to work plus, the Boost really does not taste that bad to me and it keeps me full for hours! I am a fan! When I got to work one of my bosses had made homemade bread with wheat flour - it was delicious! I am also a fan of wheat flour, I recommend using it in everything!

I was experimenting the other day while cooking and I was craving Pasta! So I decided to make:

Rigatoni with Parmesan Crusted Chicken
1) I boiled the whole wheat Rigatoni noodles
2) I opened a jar of Ragu Spaghetti Sauce with garlic & oregano
3) I added a can of diced tomatoes (Great Value, no salt added)
4) I heated the Ragu and Tomatoes and added a pinch of garlic salt and dried diced onions
5) I added 1/4 teaspoon of cinnamon (not too overpowering, added sweetness, and added antioxidants)
6) I drained the rigatoni and mixed in the sauce
7) I coated a frozen (didn't have time to thaw) boneless skinless chicken breast, which must I say was HUGE, with Parmesan Cheese!

So overall, the finished product was a little salty, and the parmesan didn't coat evenly. But It was good and the added cinnamon added a sweet taste that I LOVED!

For next time: I definitely will thaw the chicken and dip it in an egg wash before coating it in parmesan cheese. Lesson Learned!

Last weekend I went home and made Taco Soup for my family:

Morgan Erika's Taco Soup Recipe
  • 2 Cans of Diced Tomatoes
  • 2 Cans of Whole Kernel Corn
  • 1 Can of Light Kidney Beans
  • 1 Can of Dark Kidney Beans
  • 1 Package of Dry Ranch Dressing
  • 1 Package of Dry Chili Mix
  • 1 pound of lean ground beef or ground turkey

Cook the meat and heat the rest in a large pot (do not drain the cans), stir in the meat...Serve with Tortilla Chips, Sour Cream, and Shredded Cheddar Cheese!
